Spicy Mediterranean salad
Ingredients:
- 1 cup of spicy gazpacho olives
- 1 large ripe tomato
- 1/2 cucumber
- 1/4 red onion
- A dash of extra virgin olive oil
- A few leaves of parsley or basil
- Salt to taste
Preparation:
Cut the tomato, cucumber and onion into small pieces. Add the olives. Dress with oil, salt and herbs. Leave to stand for 10 minutes and serve cold.
