What is Cous Cous?

Couscouscous is a traditional Berber dish made from durum wheat semolina, which after cooking has an average size of just one millimetre in diameter. It is made with semolina corresponding to the hard part of the wheat that has been ground but not turned into flour.

How to use:
Bring to the boil the same volume of water or vegetable stock as couscous. When it boils, remove from the heat and add the couscous. Cover and leave to stand for 15 minutes. Add a splash of oil and stir. Season to taste.
