What is Panela Sugar?

Panela is the name given to sugar from sugar cane in its raw, unrefined state. Unlike white sugar, this food contains a mixture of molasses and sugar crystals, which is obtained as a result of mechanical processes, crushing the cane and extracting its juice with water. Finally this juice is filtered and left to dry, resulting in panela.
