What is Tapioca Starch?
Tapioca starch is obtained from cassava root (or cassava or manioc, depending on where you are in the world) and is a relatively little-used cooking ingredient in Europe but very common in parts of the world as diverse as Asia and Africa.
It is a powerful thickener, very easy to use as it can be easily dissolved in cold water. Heat must be applied for it to take effect, but the effect is almost immediate and its thickening capacity is quite high. It is also used in sauces and as a binding agent in burgers or other meat masses.
